Idiyappam

I’m always been asked by my toddler client’s mothers, ‘what do we do to replace kids favourite noodles and Maggie’ , these commercial on television make our kids crave for these noodles be it Maggie, yuppie or Hakka noodles , It’s made with all purpose flour ( Maida )  , those unhealthy masala and preservative  , which is not good for healthy  , I have come up a healthy version of noodles.

Let me introduce you to Idiyappam. Its SRI LANKAN speciality

Almost everyone loves South Indian food… But there is so much more to South Indian delicacies than our usual idli, dosa and uttapam. Try these for your kids and trust me they will love it

Idiyappam – Putu mayam, putu mayang, string hoppers, noodles etc

VERSION 1:

CLASSIC PLAIN IDIYAPPAM  

Ingredients

  • Rice flour- 2 cups
  • Water- 2 1/2 cups
  • Salt- 1/4 tsp
  • Grated coconut

Method:

  • Combine salt and roasted rice flour.
  • Add boiling water gradually and using a wooden spatula mix the dough.
  •  Add water and by using your hands knead together until you get smooth and soft dough.
  • The dough should not be too tight and it should not be sticky also.
  • Cover the dough with a wet cloth.
  • Grease the top and bottom of idli moulds .
  • Sprinkle the grated coconut on these moulds.(optional)
  • Take small portions of dough and press each portion through Idiyappam mould or Idiyappam presser onto greased idli moulds (you can use chakli mould with small holzes.)
  • Once the water starts boiling in the steamer, place the idli moulds and steam for 7-9 mins.
  • Keep the steamed closed for a min or two.
  • Serve hot.

 

Version 2:

RECIPE FOR MIXED VEGGIES IDIYAPPAM:-

INGREDIENTS:

  • 2 pieces Cardamom
  • 2 Cloves
  • A pinch of Cinnamon
  • ½ cup onion
  • ½  cup tomato
  • ½ cup peppers
  • ¼ cup beans
  • ½ cup carrots
  • 1 spoon ( as per taste ) Indian masala – chilli powder , turmeric powder
  • 1 spoon Garam masala
  • Salt  ( as per taste)
  • Coriander 1 cup ( finely chopped)

METHOD:

  • Make Idiyappam ( REFER VERSION1 )
  • Heat oil in a pan; add cardamom, clove, and cinnamon.
  • Add onion and fry till translucent.
  • Add tomato and fry till oil appears.
  • Add peppers , beans , carrots let it cook .(I add all veggies including spring onions and finely chopped spinach too)
  • Add red chilli, turmeric powder and Garam masala powder and salt fry for 2 min
  • Add chopped coriander leaves and sauté it.
  • Add cooled Idiyappam to the pan and mix it well.
  • And your mixed veggies Idiyappam are ready.
  • Serve it spiced or plain buttermilk ( little odd but a good combination)

VERSION 3:

CLASSIC IDIYAPPAM WITH TWIST

Ingredients

  • Rice flour- 2 cups
  • Water- 2 1/2 cups
  • Salt- 1/4 tsp
  • Beetroot /palak( spinach)

Method:

For Beet root Idiyappam –

  • Before making the dough, chop beetroot in small chunks and grind, strain it and keep beetroot juice aside add pinch of salt.

For Spinach (Palak) Idiyappam –

  • Boil spinach, let it cool and then blend and strain it, keep juice aside.

For making classic Idiyappam with twist:

  • Combine salt and roasted rice flour.
  • Add beetroot  juice or spinach juice
  • Add very little boiling water gradually and using a wooden spatula mix the dough.
  •  Add water carefully and by using your hands knead together until you get smooth and soft dough.
  • The dough should not be too tight and it should not be sticky also.
  • Cover the dough with a wet cloth.
  • Grease the top and bottom of idli moulds.
  • Make sure you do not put more water as we have added juice
  • Serve hot
  • My secret : Add grated cheese and cottage cheese little olive oil oregano and chilli flakes ( if for adult)

NOTE:

  • I  have made  Idiyappam with my signature sauce ( DM / EMAIL ME IF YOU WISH TO KNOW ABOUT IT )
  • Make sure you serve it hot and fresh.

Serving options:

  • Idiyappam is served with a coconut-based stew or Korma.
  • Sweet toothier would love, Idiyappam with ghee, sugar, and grated coconut.
  • Weight watchers would Idiyappam made with some ragi (finger millet) served with vegetable stew.
  • Idiyappam with korma
  • Idiyappam with Chinese twist
  • Idiyappam with lemon and turmeric garnished with roasted peanuts and curry leaves.
  • Idiyappam with caramelised nuts and banana for sweeter version.
  • Idiyappam with tossed with stir fries veggies and paneer or tofu

  1. Waaaaoo wat a different recipe…as a punjabi we never even heard about these south indian recipe names..i love dosa and idli but never tried these…now i would like to try it once…

  3. This is something new to me. Whenever my son crave for noodles I give him but I avoid masalas. Making noodles at home is an awesome idea. Thanks for sharing
