Fruit Raita

Ingredients

To Be Mixed Into A Dressing

  • Low-fat curds (dahi) , beaten-1 1/2 cups
  • Low-fat milk (99.7% fat-free)- 1/2 cup
  • Chopped mint leaves (phudina)- 1/2 cup
  • Black salt (sanchal)- 1 tsp
  • Finely ground pepper-1/4 tsp
  • Salt to taste

Other Ingredients

  • Chopped apple-1 1/4 cups
  • Lemon juice-1 tsp
  • Chopped pineapple-1 1/4 cups
  • Pomegranate (anar)- 1/2 cup

 

Method

  1. Combine the apple and lemon juice in a bowl and toss well.
  2. Add the pineapple and pomegranate, toss well and refrigerate to chill.
  3. Refrigerate the dressing for at least an hour.
  4. Just before serving, add the dressing and toss well.
  5. Serve chilled.

Handy tip:

  1. Use fresh low-fat curds and make sure the pineapple is not sour to avoid the addition of sugar.

Fruit Punch

Ingredients

  • Pineapple slices with the skin,
  • cut into pieces-3 big
  • Orange, seperated into segments-1 big
  • Apple (unpeeled), cored and cut into pieces-1 medium sized
    Crushed ice to serve

Method

HOPPER / JUICER

  1. Juice all the ingredients.
  2. Add some crushed ice in 2 glasses and pour the juice over it. Serve immediately.

MIXER / BLENDER

  1. Blend all the ingredients using little water (if required) till smooth.
  2. Strain the juice using a strainer or a muslin cloth.
  3. Add some crushed ice in 2 glasses and pour the juice over it. Serve immediately.

Fruit Nutty Phirni

Ingredients

  • Coarsely powdered Oats : 15gms
  • Mixed fruits : apple , banana, chickoo , berries
  • Milk : 1 cup (100ml)
  • Almond/walnut: 1 tsp crushed
  • Roasted Flax seed: 1 tsp

Method

  • Heat the milk in a deep non-stick pan and bring it to a boil.
  • Add the oats mix well and cook on a medium flame for 2 minutes, while stirring continuously.
  • Remove from the flame, keep aside to cool slightly. 
  • Add fruits, crushed almonds or walnuts, add roasted flax seeds mix well and refrigerate it for at least 30 minutes. 
  • Serve chilled.

Fruity Yoghurt

Ingredient

  • Curds (dahi)- 3 cups
  • Mango or strawberry or orange puree-2 cups
  • Powdered sugar-1 tbsp
  • Vanilla essence-1/2 tsp

Method

  1. Tie the curds in a muslin cloth and hang for a couple of hours to drain out the water.
  2. Combine all the ingredients in a liquidiser and blend to a smooth mixture.
  3. Pour the mixture into a piping bag and pipe onto 4 individual serving plates.
  4. Refrigerate till chilled and serve garnished with mint sprigs and lemon rind.

Infused Drink

Ingredients

  • Green tea- 2 bags
  • Lemon - 1
  • Mint leaves- handful
  • Water- 1-2 litres, depending on how strong you want it to taste
  • Ice cubes.

Method

  • Boil the water and add the tea bags to it.
  • Let steep for 10 minutes.
  • Remove tea bags and add lemon wedges and mint leaves.
  • Chill for 1 hour.
  • Strain well and serve.
  • Simply superb and tasty, you can make this infused iced tea and store it in the fridge for up to 3 days.

STRAWBERRY AND KIWI INFUSED WATER

Ingredients-

Strawberry- 4-5

Kiwi- ½

Water- 2 litres

Ice cubes

Method-

Slice your kiwi in half and peel the half you're using.

Thinly slice your strawberry and peeled kiwi.

Add slices to your jug/carafe/mason jar, whatever you'd like to keep your water in.

Fill container with water, cover, and leave in the fridge overnight. In the morning, your water will be nice and tasty!

Note: If no Strawberry available, no problem, go ahead with the Kiwi J.

CUCUMBER, SWEET LIME AND LEMON INFUSED WATER-

Ingredients-

Cucumber- 2

 Sweet Lime- 1

Lemon- ½

Water- 1-2 litres

Ice cubes

Method-

In a big jar, layer the cucumber slices, sweet lime wedges and lemon pieces with ice cubes. Fill the jar with water. Let it chill for an hour and enjoy.

LEMON, MINT AND BASIL INFUSED WATER

INGREDIENTS

Lemon- ½

Basil – 10-15 leaves

Mint  - 8-10 leaves

Water- 2 litres

Ice cubes

 

METHOD

In a big jar, layer the lemon slices, mint and basil with ice cubes. Fill the jar with water. Let it chill for an hour and enjoy.

Strawberry Smoothy

Ingredients

  • Strawberries-4-5
  • Skimmed milk- 1/2 cup
  • Low fat yogurt- ½ cup
  • Honey- ½ tsp
  • Almonds- 6 to 7

 

Method

  • Coarsely chop ½ cup strawberries and gradually add 1/2 cup skimmed milk, ½ cup low fat yogurt and ½ tsp honey to it in a blender .

  • Once it is evenly blended pour into a tall glass and sprinkle finely chopped 6 to 7 almonds. Makes a refreshing drink that is very high on nutrition and taste yet low on calories.

Watermelon Lemonade

Ingredients

  • Watermelon, chopped-4 cups
  • Honey
  • Fresh lemon juice-1 1/2 cups
  • Cold water-6 cups

 

Method

  • Place watermelon in a blender; process until smooth and set aside.
  • In a large pitcher, combine sugar and lemon juice; stir until sugar is dissolved.
  • Stir in water.
  • Add watermelon; mix well. Serve very cold; stir well before serving.

Guava Ginger & Lime Smoothie

Ingredients

  • Guava (medium size)- 1 ripe
  • Ginger juice-1 tablespoon
  • Juice of half lime
  • Sugar or honey as needed
  • Pinch of salt

Method

  • Peel and chop the guava into small pieces.
    In a blender, blend together chopped guava, ginger juice, lime juice, sugar or honey and pinch of salt to a smooth puree.
  • Add enough of water to get a consistency of a smoothie. Strain the juice to remove the seeds.
  • Serve the smoothie either chilled in refrigerator or by adding ice cubes.
  • Note: You can alter the quantity of ginger juice and lime juice according to your own preference.

Hummus Dip with Tahini Pasta

While we commonly make quick and easy versions of hummus with chickpeas, garlic and curds, this is a slightly more elaborate hummus dip enhanced with tahini paste.

This authentic recipe has a rich mouth-feel and really strong flavour. Apart from the exciting flavour of tahini paste, the strong taste of garlic and a tinge of lemony tang are also clearly noticeable in this recipe, not to forget the herby touch of parsley.

You can serve the Hummus Dip with Tahini Paste along with Lavash or Chips , to make a wonderful finger food. You can munch on it while watching a movie, but it is so tasty that it can be served at parties too!

Ingredients

  • Soaked and boiled kabuli chana (white chick peas)- 1 1/2 cups
  • Thini paste-2 tbsp
  • Roughly chopped garlic (lehsun)- 1 1/2 tsp
  • Lemon juice-2 tsp
  • Thick curds (dahi)- 2 tbsp
  • Olive oil-2 tbsp
  • Salt to taste

For The Garnish

  • Olive oil-1 tbsp
  • a sprig of parsley

Method

  • Combine all the ingredients in a mixer and blend it till smooth.
  • Transfer the mixture on a serving dish, garnish it with olive oil and parsley.
  • Serve immediately with lavash and chips or refrigerate till use.

Tomatoes Garlic Dip

Ingredients

  • Tomatoes-4 nos
  • Red chillies- 4 to 5 nos
  • Garlic cloves-20nos
  • Gingelly oil/ sesame oil-1/2 tsp
  • Salt for taste
  • Water as required

Method

  1. Grind the tomato, chopped garlic cloves, red chillies adding salt and enough water. Do not grind it too watery.
  2.  Heat gingelly oil in a pan till its smoking point
  3.  When the oil starts to smoke, simmer the flame and add the ground paste. 
  4.  Mix well and switch off the flame. Flame should be off. Let the chutney be in the hot   oil  for some time. 
  5. The colour of chutney will change and it will thicken slightly.
  6. Remove in a bowl and serve with roti, stuffed paratha or idli, dosa as per your choice.
